It is the first time Man City have come back from a 2-0 deficit at half-time to pick up a win in the Premier League.
Haaland scores his first Premier League hat trick as City move to the top of the table for now.
For Crystal Palace, Eze was the player of the first half after he helped Crystal Palace to a 2-0 lead. His free kick was turned into his own net by Stones after a deflection off Walker. His corner 15 minutes later was then headed low into the goal by Andersen.
But the second half was the Haaland show. Silva got things started after his deflected effort wrong-footed Guaita and made it 2-1.
Haaland then scored a 20-minute hattrick to give his side the win. He finished Foden's cross for his first before tapping home Stones' scuffed shot from a quickly taken corner.
Gundogan then played Haaland in behind for his third of the game and the striker showed his strength and clinical nature to end the game.
