After Amartey had been hooked in the 66th minute, the Blues secured the victory with a goal from Mateo Kovacic 12 minutes from time.
With just three minutes left, Wout Faes received his second yellow card and was thus ejected, making things worse for Brendan Rodgers' team.
After their 3-1 victory, Chelsea are still in tenth place but are now just a point behind ninth-place Brentford.
